Potato Soup

Ingredients: 
500g - potato
2 tbsp butter
1 glass milk
1 egg yolk
1 onion
1 glass water
1tbsp cream
Salt & pepper to taste



Method
  1. Slice the onion & potato very thinly.
  2. Cook in butter for 5 minutes, stirring all the time.
  3. Do not allow the potatoes to brown.
  4. Add the milk & the water & cover & simmer for 30 mts.
  5. Pass the soup through a fine wire.
  6. Sieve. Beat egg yolk & add it to the soup.
  7. Stir in the cream gradually. Serve
