Ingredients:
Use Paneer made from skimmed milk
Paneer or Tofu - 200 gm
Capsicums - 150 gm
Onions - 150 gm
Carrots - 100 gm
Tomatoes - 150 gm
Oil - 1 tbsp
Green chillies - 2, chopped finely
Ginger - 1 tsp, minced
Mint leaves - 3 tbsp, minced
Coriander leaves - 3 tbsp, minced
Red chillies - 2
Coriander seeds - 2 tsp
Cumin seeds - 1 tsp
Pepper - ½ tsp
Salt - to taste
Method
- Slice the paneer or tofu. Cut capsicums into 3 cm pieces.
- Cut onions into 6 parts and separate layers. Slice carrots. Chop tomatoes.
- Steam all the vegetables except tomatoes till tender crisp.
- Powder red chillies with coriander, cumin and pepper. Heat oil, fry minced ingredients.
- Add powdered masala, fry 1 minute. Add tomatoes, paneer and vegetables. Add salt.
- Sprinkle 2 tbsp of water and simmer for 5 minutes. Serve with rotis.
