Mughlai Kheema Baingan

Ingredients: 
750 g - mutton, including breast meat
250 g - large sized brinjal
1 cup - ghee
1 cup - thick tomato puree
15 - cashew nuts
4 - large onions, thinly sliced
2 tsp - ginger-garlic paste
1 tbsp - poppy seeds
1 tbsp - cumin seeds
8 flakes - garlic
2� long piece - ginger
� tsp - turmeric
2 tsp - coriander seeds
1 tsp - chilli powder
salt to taste




Method
  1. Fry onions golden yellow in boiling ghee.
  2. Now add ground masala and salt and fry till ghee surfaces the top, adding a little of water as and when you feel required to fry it to deep golden brown.
  3. Now put in meat, green chillies and garlic flakes.
  4. Fry for 3 to 6 minutes.
  5. Now add 2 � cups of hot water.
  6. Cover and simmer till meat is cooked.
  7. Sprinkle garam masala.

Spaghetti with meat balls

Ingredients: 
450g sphagetti 
1 onion
2 cloves garlic
3 tbsp olive oil
6 tomatoes
1 tbsp brown sugar
meat balls
450gms meat
2 slice white bread
1 onion
1 tbsp parsley
3/4 cup cheese
salt pepper to taste




Method
    For the meat balls:
         Soak bread in water squeeze & add to meat with finely chopped onion, parsley and cheese
    For the seasoning:
         Beat eggs lightly, combine & fry.
    For the sauce:
    1. Heat oil, add chopped onion, crushed garlic & cook till golden.
    2. Add blanched & pureed tomatoes, sugar, thyme, pepper and salt.
    3. Lower heat cover & cook slowly for an hour.
    4. Add meat balls and cook gently.

Kheema Muthia

Ingredients: 
500 g - whole wheat flour
500 g - minced mutton
1 cup - grated coconut, ground to a paste
1/2 cup - onion, finely sliced
1 tsp - chilli powder
1 tsp - coriander powder
1/2 tsp - turmeric powder
1 tsp - garam masala powder
2 tbsp - ghee or oil
2 tbsp - ginger garlic paste
1 tbsp - ghee
coriander leaves to garnish
lime juice to taste
salt to taste



Method

  1. Mix wheat flour with 1/2 the coconut paste, salt and 1 Tbsp of ghee.
  2. Add enough water and bind into firm dough.
  3. Shape the dough into oblong muthias, like mini sausages.
  4. Combine all the powders with remaining coconut paste.
  5. Heat the ghee or oil and fry onions till golden brown.
  6. Add ginger-garlic paste and fry till fragrant. Add the coconut paste and fry well.
  7. Add the minced mutton and fry till brown. Add salt and 4 cups of water.
  8. When the mixture begins to boil, add the muthias.
  9. Cover and simmer gently till the mutton and muthias are cooked. (about 40 minutes).
  10. Serve hot garnished with coriander leaves.

Mutton Boti Kebab

Ingredients:
1 kg - mutton cubes
1 1/2 tbsp - ginger paste
1 1/2 tbsp - garlic paste
3 tbsp - raw papaya paste
1 tsp - royal cumin seeds
1 tsp - black pepper powder
1 tbsp - kachri powder
1 tsp - pathar ke phool powder
1 tbsp - kabab chini powder
1 tbsp - rose petal powder
1 tsp - red chilli powder
3 tbsp - hung curd
1 1/2 tsp - garam masala
1/2 tsp - green cardamom powder
1 tsp - coriander powder
2 tsp - poppy seed paste, boiled and ground
2 tbsp - coriander and mint leaves
1 tsp - green chillies
desi ghee
salt to taste

Method
             1.In a thick bottomed dish, marinate the mutton cubes with the garam masala, salt and red chilli paste, ginger and garlic paste, mix together.
             2.Add the rest of the dry masalas and raw papaya paste and mix again. Then add the curd and continue mixing.
             3.Add the coriander green chillies and mint leaves, mix it and leave to marinate for at least 1 hour.
             4.Now cook the marinated mutton cubes on a slow fire for 20-30 minutes.
             5.Put the cubes on a skewer and pan grill them with a bit of ghee for 6 -7 minutes. Serve hot with onion rings and mint chutney.

Mutton Biryani

Ingredients:
5 tbsp - oil
700 g - mutton
1 tsp - roughly ground garlic
1/2 bowl - water
1 tsp - salt or to taste
3 to 4 - cloves
2 to 3 - whole green cardamom
2 to 3 - cinnamon sticks
2 tsp - curd
1 tsp - garam masala
boiled rice
food colour and saffron (optional)

Method
               1.Heat oil in a pan, add the garlic and stir.
               2.Add the mutton and water and stir again.
               3.Now add the salt, cloves, cardamom, cinnamon curd and garam masala.
               4.Stir well, cover and cook for about one hour.
               5.Then add the rice, if needed add some more water.
               6.Add the colour and saffron, cover the dish and seal the sides with dough.
               7.Cook till well done and serve.
