Vegetable Dahlia Moong Upma/ Vegetable,Broken Wheat and Lentil Upma

Ingredients: 
beans - 1/4 cup
peas - 1/4 cup
carrot - 1 (finely grated)
potato - 1
onions - 1 (finely chopped)
dahlia - 1 cup
moong dal - 1 cup
mustard - 1 tsp
chana dal - 1 tsp
udad dal - 1 tsp
green chillies - 5-6
chopped coriander - 1 tsp
curry leaves - 10-12
asafoetida(hing) - 1 pinch
jeera/cumin seeds - 1 tsp
ghee - 1 tsp
turmeric - 1 pinch
ginger - 1 small piece
salt to taste



Method

  1. Heat ghee in a thick bottomed pan and roast dahlia and moong dal till you get the distinct aroma.
  2. Heat oil in a pressure pan/cooker, add asafoetida, mustard, chana dal, udad dal, jeera, turmeric and stir fry.
  3. Add finely cut green chillies and ginger, chopped curry leaves and finely chopped onions and fry for 2-3 mins.
  4. Add all the vegetables, add salt and mix well.
  5. Add 4 cups of water and bring it to boil.
  6. Add roasted dahlia and moong dal and mix well.
  7. Close the lid of the pressure pan/cooker and cooke till 2-3 whistles
  8. Garnish with coriander and serve hot.

Capsicum Aloo Subzi

Ingredients: 
1 large onion cut finely
3 potatoes sliced long (like french fries or potato wedges)
3 large green bell peppers (capsicum) halved and sliced long
1 large tomato cut finely
1 tsp cumin seeds
2 tbsp oil
1/4 tsp turmeric powder
1/2 tsp chili powder (or to taste)
1/4 tsp ground ginger powder
1/2 tsp dhania powder (ground coriander powder)
3-4 tsp ground roasted peanut powder
Salt to taste
Chopped cilantro for garnish



Method

  1. Heat the oil in a pan,put in the cumin seeds.
  2. Add the sliced onions and saute until transparent,add the tomatoes and saute for a few minutes till soft.
  3. Add the turmeric powder,chili powder,dhania powder,ground ginger powder and the salt.
  4. Add the potatoes and cook for a few minutes until slightly soft.
  5. Add the sliced bell peppers cook until both the bell peppers and potatoes are soft.
  6. Sprinkle the roasted peanut powder.
  7. Garnish with cilantro. Serve hot with Roti/chapatti.

Aloo Sandwich

Ingredients: 
4 slices - sandwich bread
2 - potato
2 - finely chopped green chillies
1 tsp - turmeric
a pinch of asafoetida
salt to taste
oil to fry



Method

  1. Boil and mash the potato.
  2. Add the green chillies, turmeric, asafetida and salt.
  3. Make the potato into small vadas and shallow fry them.
  4. Take one slice of the sandwich bread and keep the potato vada and top it with another bread slice.
  5. Toast the sandwich in a sandwich toaster.
  6. Serve hot with tomato sauce.

Indonesian Potatoes

Ingredients: 
1 - medium sized potato
1 - small red bell pepper
1 bunch - green onions
2 tsp - soy sauce
1/2 tsp - powdered sugar
1/2 tsp - crushed red pepper
2 tsp - oil
1/4 tsp - lime juice
salt as per taste
oil for deep frying




Method
  1. Wash, peel and chop potatoes into wedges.
  2. Heat oil in kadai and deep fry the potatoes until they turn golden brown in color.
  3. Remove potatoes from oil and drain them into paper napkins so that the excess oil is absorbed;Keep aside.
  4. Meanwhile, chop green onions and the red bell pepper into thin strips.
  5. In another kadai, heat 2-3 tsp oil.
  6. Add chopped green onions and bell peppers and fry until they are tender.
  7. To this, add fried potatoes and saute.
  8. Add soy sauce, salt,sugar, crushed red peppers and mix well.
  9. Remove from stove, add lemon juice and serve hot.
  10. This dish can be eaten with rice or even separately.....

Fried Potatoes with Brinjal

Ingredients: 
2 - large potatoes, peeled and cut into medium size pieces
1 kg - brinjal (long) cut lenghtwise into 4 pieces
3 - whole red chilly broken in 2 pieces
2 tsp - cummin seeds
3 tbsp - oil
salt to taste



Method

  1. Heat 3 tbsp oil, add cummin seeds and chillies fry for few minutes.
  2. Add vegetable & salt and saute further.
  3. Cover & cook on low heat till vegetables are done.

Masala Chilli Potatoes

Time Taken : 15-30 mins



Ingredients: 
4 - potato
1 cup - finely sliced onion
2 - dry red chillies
1 tsp - chilli sauce
1 tsp - turmeric powder
1 tsp - ginger-garlic paste
1 tsp - chopped coriander leaves
salt to taste
oil to fry



Method

  1. Heat 1 tbsp of oil in a kadai.
  2. Add the dry red chillies and onions. Saute the onions.
  3. Add the chilli sauce, turmeric powder, ginger-garlic paste and salt.
  4. Boil the potatoes. Peel off the skin and cut it into small pieces and add them.
  5. Cook for 5-10 minutes.
  6. Garnish with chopped coriander leaves.
