Time Taken : 15-30 mins
Ingredients:
500g - potato
2 tbsp butter
1 glass milk
1 egg yolk
1 onion
1 glass water
1tbsp cream
Salt & pepper to taste
Method
- Slice the onion & potato very thinly.
- Cook in butter for 5 minutes, stirring all the time.
- Do not allow the potatoes to brown.
- Add the milk & the water & cover & simmer for 30 mts.
- Pass the soup through a fine wire.
- Sieve. Beat egg yolk & add it to the soup.
- Stir in the cream gradually. Serve
