Capsicum Aloo Subzi

Ingredients: 
1 large onion cut finely
3 potatoes sliced long (like french fries or potato wedges)
3 large green bell peppers (capsicum) halved and sliced long
1 large tomato cut finely
1 tsp cumin seeds
2 tbsp oil
1/4 tsp turmeric powder
1/2 tsp chili powder (or to taste)
1/4 tsp ground ginger powder
1/2 tsp dhania powder (ground coriander powder)
3-4 tsp ground roasted peanut powder
Salt to taste
Chopped cilantro for garnish



Method

  1. Heat the oil in a pan,put in the cumin seeds.
  2. Add the sliced onions and saute until transparent,add the tomatoes and saute for a few minutes till soft.
  3. Add the turmeric powder,chili powder,dhania powder,ground ginger powder and the salt.
  4. Add the potatoes and cook for a few minutes until slightly soft.
  5. Add the sliced bell peppers cook until both the bell peppers and potatoes are soft.
  6. Sprinkle the roasted peanut powder.
  7. Garnish with cilantro. Serve hot with Roti/chapatti.

Drumstick soup

Ingredients: 
5 long fresh drumsticks
1/4 tsp black pepper powder
Salt to taste




Method
  1. Scrap the fresh drumsticks lightly with a peeler, cut them into small finger length pieces and clean them.
  2. Boil drumstick pieces in water and keep aside to cool.
  3. Use the boiled drumstick water as the base of soup.
  4. Remove drumstick pieces slowly, scrap out inside flesh carefully with a blunt knife, or back of a spoon.
  5. Add drumstick flesh into base of soup, cook it for few minutes.
  6. Add black pepper powder and salt to taste.
  7. Drumstick soup is ready to serve. Serve hot, before a meal.

Gooseberry chutney

Ingredients: 
10 - goose berry 
1 sprig - cleaned curry leaves
10 - red chilli
Salt to taste
A pinch of asafoetida powder




Method
  1. Wash the goose berries, deseed and cut into samll pieces.
  2. In a blender, add red chilli, curry leaves, berries, salt and asafoetida.
  3. Add some water and grind well.
  4. Serve with rice.
Note:This is a Vit C and iron enriched chutney

Split Pea Barley Soup

Time Taken : 15-30 mins




Ingredients: 
1 cup dried green split pea lentils
3/4 cup quick cooking barley
1 red onion chopped finely
2 cups chopped carrots
3 celery ribs chopped into little pieces (yields about 1 1/2 cups)
1 tsp minced garlic
1/2 tsp paprika
1/2 tsp chili powder
1 tsp Italian seasoning
3 tbsp extra virgin olive oil
Salt to taste
2 cups of vegetarian vegetable stock (or water)
6 cups of water



Method

  1. Wash and drain the green peas.
  2. Then soak the green peas in just enough water to cover it for about twenty minutes
  3. Heat the olive oil in a large pan, add the onions and saute until transparent.
  4. Add the minced garlic and saute for a minute.
  5. Add the carrots, celery and saute for a minute.
  6. Add the salt, paprika, chili powder and saute for a minute.
  7. Add the stock and water, then add the soaked green peas and the barley and simmer for about an hour or until peas and barley are soft and all the veggies are cooked.
  8. Add the Italian seasoning and simmer for a few minutes.
  9. Serve hot. Serves about 5
Notes: When the green peas are sufficiently cooked they will dissolve slightly and the soup will begin to thicken
